Quasi tutte le schede video Hanno un uscita VGA una DVI e una HDMI secondo voi si può settare la VGA  su una risoluzione DVI su un altra e HDMI su un altra evitando che quest'ultima gestisca anche l'audio.

si, ogni monitor puo' avere una risoluzione differente e puoi disattivare qualunque uscita audio hdmi dal pannello di controllo di windows:
